Hen of the Wood restaurant in Waterbury, Vermont is adding a second location in downtown Burlington. It will be in the first floor of the new Hotel Vermont. This will be a bigger, more modern evolution of the gristmill space in Waterbury. There will be open hardwood grilling and a wood-fired custom-made brick oven for baked and roasted foods.

The interior mixes rustic found woods, vintage lighting, and modern forms for a dark, cozy dining experience. The butchery by day transforms to private dining at dinner service--after it is hosed down. We are still deciding where the sailfish is going to hang.
